- 1 c. rice, cooked and cooled
- 2 boned and skinned chicken breasts, diced
- 3 Tbsp. soy sauce
- 1 1/2 tsp. sesame oil
- 1 Tbsp. cornstarch
- 1 small onion, chopped
- 1 clove garlic, chopped
- 2 eggs, scrambled
- 1 1/2 c. frozen peas
- red pepper (optional)
Directions

1Mix chicken, soy sauce, sesame oil and cornstarch in small bowl.

2In another bowl, place peas and warm water to thaw peas slightly.

3In a wok or skillet, heat a couple of tablespoons of oil.

4To hot oil, add onion and garlic; cook until tender.

5Remove from wok.

6Cook meat mixture quickly on high heat; remove.

7Add more oil to wok, if necessary.

8Add cooked rice, scrambled eggs, onion, garlic and meat to wok.

9Cook through.

10Add soy sauce and red pepper to taste.
