- 3 c. cooked, cold rice (use regular brown or white rice or instant)
- 3 green onions, sliced
- 2 eggs, beaten
- 1 c. frozen peas and carrots, thawed
- 1/3 c. chopped, cooked chicken, meat or fish (optional)
- 1 pkg. Sun-Bird fried rice seasoning mix
Directions

1Heat 2 tablespoons oil in skillet.

2Stir-fry rice and green onions.

3Add seasoning mix (I bought at Bi-Lo) and 2 teaspoons soy sauce.

4Stir-fry 1 minute.

5Push rice to side.

6Add eggs and scramble.

7Stir into rice.

8Add peas and carrots and meat (optional) and heat.

9Makes 5 servings, about 1 cup each as prepared.
