Fried Rice With Shrimp

  • 1/2 lb. fresh shrimp, shelled and deveined
  • 1 tsp. cornstarch
  • 1/2 tsp. salt
  • 5 Tbsp. oil
  • 3 beaten eggs
  • 4 c. cold cooked rice
  • 2 Tbsp. soy sauce
  • 3 green onions, chopped
  • dash of ginger
  • 2 Tbsp. rice wine (if desired)

Directions

    Cut shrimp into small pieces.

    Mix with cornstarch and salt. Heat 1 tablespoon oil in wok to 400°.

    Stir-fry shrimp and green onions until pink, about 30 seconds.

    Remove.

    Heat 2 tablespoons oil in wok, pour in beaten eggs.

    Scramble fine.

    Remove.

    Heat 2 tablespoons oil in wok and add rice, soy sauce and ginger. Stir-fry until thoroughly heated.

    Add eggs, shrimp and rice wine. Stir-fry 1 minute.

    Recipe is also good without shrimp or good with leftover pork or beef.
