- 2 large ripe plantains (yellow with black spots; not totally black)
- 1/2 c. your favorite cooking oil
Directions

1Peel the bananas and cut diagonally approximately one-half inch thick.

2Place the oil in a frying pan (or a deep fryer). Allow the oil to get hot; you should see some bubbles, but not smoke.

3Place the plantain sections into the oil and cook on both sides until golden light brown in color.

4Place on a paper towel to blot excess oil.

5Serve hot.

6Serves six.
