  • 3 lb. fresh prawns or shrimp (with shells)
  • fat (for deep frying, heated to 360~)
  • 1/2 c. olive oil
  • 4 cloves garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. oregano
  • 1/4 tsp. pepper
  • 1 tsp. chopped parsley

    Wash prawns in cold water.

    Remove tiny legs.

    Peel off shells and devein prawns.

    Rinse in cold water, then pat dry with absorbent paper.
