Fried Squash Cakes

Ingredients

  • 3 to 4 medium squash or zucchini
  • 1 to 2 onions (optional)
  • salt and pepper as desired
  • 2 eggs
  • 1/4 c. flour
  • 1/8 tsp. oregano (optional)
  • 1/8 tsp. basil (optional)
  • 2 to 3 Tbsp. oil (I like olive oil or safflower oil)

Directions

    Grate raw squash and onions and mix with remaining ingredients, except the oil.

    Heat the oil in frying pan and drop mixture by rounded tablespoonfuls into oil, turning when cakes reach desired brownness.
