- 3 Tbsp. salt
- 1 egg
- 1 c. biscuit mix
- 1/2 c. milk
- salt, pepper and sugar to taste
Directions

1Peel and cut squash or eggplant into large strips (like large french fries).

2Soak in 3 tablespoons salt water.

3The longer you soak them, the better, but at least 15 minutes before frying.

4Mix 1 egg, salt, pepper and sugar to taste; then mix well 1 cup biscuit mix and 1/2 cup milk.

5Dip squash or eggplant in egg mixture; then into biscuit mix and deep fry.
