- 4 to 6 tomatoes
- 1/2 tsp. salt
- black pepper to taste
- 1/2 c. all-purpose flour
- 2 Tbsp. butter
- 2 Tbsp. light brown
Directions

1Cut the tomatoes into 3/4-inch thick slices.

2Salt and pepper both sides of slices.

3Dredge in flour, coating well and shaking off excess.

4Heat butter until foamy, but not browned.

5Cook tomatoes gently until first side is lightly browned.

6Before turning, crumble 1 tablespoon brown sugar over the tops.

7Turn. Add extra butter if needed.

8Crumble remaining sugar over tomatoes. Fry second sides until lightly browned.

9Remove tomatoes.

10Hard green tomatoes will have to be cooked 5 to 10 minutes.

11Can use bacon fat.
