- 4 medium yams, peeled and cut into 1-inch thick slices
- 4 c. water
- a dash of salt
- 4 Tbsp. butter or margarine
- 2 Tbsp. sugar
Directions

1Soak sliced yams in water with salt for 30 minutes.

2Remove from water; drain and pat dry.

3Melt butter in large, heavy skillet until bubbly.

4Add yams and brown quickly on both sides. Sprinkle with sugar.

5Stir gently to coat both sides.

6Cover; reduce heat to low heat.

7Simmer for 15 to 20 minutes or until tender.
