Baked Breakfast Cup

Ingredients

  • 2 ramekins or oven proof mugs
  • 2 slice crustless buttered bread
  • 2 slice bacon
  • 2 eggs
  • 2 tsp chopped spinach (optional for colour contrast)
  • 1 pinch of salt and pepper
  • 1 handful of good strong grated cheese (whatever you prefer melted on top)
  • 1 pinch of finely chopped parsley

Directions

    line the inside of the mug with the bread, butter side out.

    then line the bread with bacon
  3. 3
    pop in oven at 200c to cook slightly for 5 mins
  4. 4
    crack the eggs into the cups whole and add the spinach salt and pepper and back in the oven.

    looks better if you poke the spinach in with the whites without breaking the yolk
  6. 6
    cook until the yolk is nearly to your liking, top with the cheese and back in until its melted (I used mature cheddar)

    use a tbsp to remove and serve with a sprinkling of parsley (and big dollop of brown sauce)
