- 6 ears sweet yellow corn
- 3 to 4 slices salt pork bacon
- 1 Tbsp. self-rising flour
- 1 stick butter or margarine
- salt to taste
- sugar to taste
Directions

1Shuck and clean silks from corn.

2Wash and drain.

3Use sharp knife to cut and scrape corn from cobs into a wide open pan or bowl.

4Add 1 tablespoon of flour and about 1/2 to 1 cup of water. Blend well.

5Slowly cook salt pork in cast-iron skillet to extract the grease.

6Once grease is extracted, you can drain salt pork on a paper towel and nibble on it as you cook.

7Remove grease from heat and slowly stir corn mixture into grease.

8Return skillet to heat and cook over medium heat.

9Add the stick of margarine, salt and sugar to taste and let simmer, stirring slowly, until corn is thick and the grease rises to the top (approximately 30 minutes).
