- 1 Cup sauteed vegetables (Onions, Spinach, zucchini, broccoli)
- 1 egg yolk
- 2 egg whites (beaten)
- 1 Tablespoon Parmesan cheese
- Salt and Pepper to taste
Directions

1Preheat oven to 350 degrees.

2Place 1 c. of sautAed vegetables to small nonstick pan over medium heat.

3Use your favorite.

4I like to use onions, spinach or zucchini or broccoli, and tomatoes.

5You can use sautAed, roasted or steamed vegetables of your choice.

6Add 1 egg yellow and 2 egg whites (beaten) with salt and pepper to vegetable mixture.

7Move mixture around until slightly solidified.

8transfer pan (with ovenproof handle) to oven.

9Bake until frittata is almost firm to the touch.

10sprinkle with feta or parmesan cheese (1 T) and bake until firm.

11Voila!
