- 1/2 pound squid cleaned
- 3/4 cup flour, all-purpose
- 1 Fillets sole fillets cut in 1 inch cubes
- 1 cup water
- 2 teaspoon olive oil
- 1/2 pound shrimp shelled and deveined
- 2 each egg whites stiffly beaten
- 2 teaspoon lemon juice
- 1 x vegetable oil for frying
- 3 teaspoon flour, all-purpose
Directions

1Wash and dry the seafood.

2Sprinkle with lemon juice and salt.

3Dust with about 3 tablespoon of flour.

4Sift remaining 3/4 cup flour and pinch of salt into a small bowl.

5Blend in water and olive oil.

6Allow to stand at room temperature for 1 hour.

7Fold in beaten egg whites.

8Heat 2 inch of oil to 375 in an electric skillet.

9Dip seafood in batter and fry a few pieces at a time for 1 minute, or until golden.

10Drain on paper towels.

11Keep warm in a 200 degree oven until all are cooked.
