  • 1 cup milk 10fl oz
  • 5 egg yolks
  • 2 1/16 cups caster sugar
  • 1 1/8 pounds fromage frais 1/2 kg
  • 1 cup mascarpone cheese
  • vanilla optional

    Heat the milk.

    Whisk together the sugar and egg yolks, add the milk and return to a rinsed out pan.

    Bring up the temperature until the custard thickens, then strain and cool it.

    Blend in the cheeses and freeze in a sorbetiere.
