- 2 c. fresh basil leaves*
- 6 to 8 eggs
- 1 1/2 c. Italian bread crumbs
- 1 handful Parmesan cheese
- salt and pepper to taste
- olive oil (for frying)
Directions

1Wash and dry basil leaves.

2Stack leaves and chop finely. Crack eggs into a bowl and beat with a fork.

3Add the basil, bread crumbs, Parmesan cheese, salt and pepper and stir to mix.

4Let set a few minutes and, if mixture appears dry, add 1 or 2 more eggs. Mixture needs to be consistency of heavy pancake batter.
