- 1 c. vanilla wafer crumbs
- 3 eggs, separated
- 1 c. sugar
- 2 Tbsp. water
- grated peel of 1 lemon
- 1/4 c. lemon juice
- 1/2 c. whipping cream, whipped
- vanilla wafers and whipped cream for garnish
Directions

1Line an 8-inch pie pan with wafer crumbs.

2Beat egg yolks until thick.

3Add 1/2 cup sugar, water, lemon peel and juice. Cook in a double boiler until very thick, about 12 to 15 minutes. Cool.

4Beat egg whites until stiff.

5Add remaining sugar gradually; fold into lemon mixture.

6Fold in whipped cream.

7Pour into pie pan lined with crumbs.

8Place, unwrapped, in freezer and let harden, at least 5 hours.
