- 1 c. canned pumpkin
- 1 c. sugar
- 1 tsp. pumpkin pie spice
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 1/2 c. chopped walnuts (optional)
- 1 c. chilled whipping cream
- 1 (9-inch) baked pie crust
Directions

1Spread soft ice cream in baked pie crust.

2Put in freezer. Mix pumpkin, sugar, spices, salt and nuts.

3Beat whipping cream until stiff.

4Fold into pie mixture.

5Pour over ice cream in pie shell.
