Ingredients

  • 250g tub PHILADELPHIA Spreadable Cream Cheese
  • 1/2 tablespoon icing sugar
  • 1 tablespoon Cointreau
  • 90g packet chocolate hazelnut macaroons, crushed
  • 12 red glace cherries halved
  • 100g flaked almonds, toasted
  • 60g dark chocolate, melted
  • Fruit Coulis
  • 1 punnet pureed raspberries (or strawberries) with Safeway 1 lb For $3.99 thru 02/09
  • 1 tablespoon icing sugar

Directions

    Combine Philly*, icing sugar and Cointreau.

    Fold through the macaroons and cherries.

    Spoon the mixture onto a piece of baking paper, spread to form a rectangle, 30cm x 5cm.

    Roll up in the paper to form a log, then carefully press into a triangular shape.

    Freeze until firm.

    Remove the paper.

    Thoroughly coat the log with flaked almonds and drizzle with chocolate.

    Slice and serve with Fruit Coulis.
