Frozen Chocolate Pie

Ingredients
- 6 oz. semi-sweet chocolate
- 1/2 tsp. instant coffee
- 4 eggs, room temperature
- 1 Tbsp. dark rum
- 1 tsp. vanilla
- 1 1/2 c. whipping cream
- 3 Tbsp. shaved chocolate
- 1 (8 oz.) baked pie crust
Directions

1Melt chocolate with coffee in top of double boiler over hot water.

2While mixture is hot, whisk in the eggs, rum and vanilla until smooth.

3Cool 5 minutes.

4Whip 1 cup cream until stiff. Gently fold into chocolate mixture.

5Blend completely.

6Pour into crust and freeze about 1 hour before serving.

7Transfer to refrigerator.

8Whip remaining 1/2 cup cream and dollop over pie. Sprinkle with chocolate shavings.

9Pie can be frozen up to 3 months.

10Can use plain or chocolate graham crust.
