- 2 qt. unpeeled and sliced cucumbers
- 1 large onion
- 2 Tbsp. salt
- 1/2 c. white vinegar
- 1 c. sugar
Directions

1Let cucumbers and onion slices stand 2 hours in salt.

2Drain and rinse well.

3Add vinegar and sugar.

4Let stand 1/2 hour or until juice covers cucumbers.

5Freeze in whatever size containers you wish to use.

6Thaw and serve.

7Will keep several days in refrigerator after thawing.

8I use a 2-quart Pyrex roasting pan to make relish and freeze in different size containers.
