Frozen Cucumbers

Ingredients

  • 2 qt. unpeeled and sliced cucumbers
  • 1 large onion
  • 2 Tbsp. salt
  • 1/2 c. white vinegar
  • 1 c. sugar

Directions

    Let cucumbers and onion slices stand 2 hours in salt.

    Drain and rinse well.

    Add vinegar and sugar.

    Let stand 1/2 hour or until juice covers cucumbers.

    Freeze in whatever size containers you wish to use.

    Thaw and serve.

    Will keep several days in refrigerator after thawing.

    I use a 2-quart Pyrex roasting pan to make relish and freeze in different size containers.
