- 3 egg yolks
- 1/2 c. honey
- pinch of salt
- 1 c. heavy cream
- 2 egg whites
Directions

1On the top of double boiler, whisk yolks.

2Beat in honey; place over simmering water and cook about 10 minutes.

3Stir frequently; remove from heat and cool in refrigerator.

4Whip whites with salt in separate bowl.

5Whip cream in separate bowl; fold honey, yolks, cream and whites gently.

6Spoon into glasses and freeze 4 hours.

7Serve with melon slices.
