- 9 lb. ripe peaches
- 1 tsp. Fruit-Fresh
- 1 gal. water
- 3 1/2 c. sugar
- 1/2 c. plus 2 Tbsp. Minute tapioca
- 1/4 c. lemon juice
- 1 tsp. salt
Directions

1Scald, peel and slice peaches.

2Measure 4 quarts.

3Dissolve Fruit-Fresh in water.

4Add peaches; drain.

5Combine peaches with other ingredients.

6Line four 8-inch pie pans with heavy-duty foil, letting it extend about 5 inches beyond the pan.

7Divide the filling among foil lined pans.

8Fold foil over loosely.

9Freeze until firm, then cover tightly.

10Remove from pan; return to freezer.

11May be stored 6 months.
