- 2 (8 oz.) pkg. cream cheese
- 1 tsp. lemon juice
- 1 (21 oz.) can pie filling (any kind)
- 3/4 c. sugar
- 1 tsp. vanilla
- 2 eggs
- vanilla wafers
Directions

1You will need 2 1/8-inch paper cupcake shells.

2Mix well cream cheese, lemon juice, sugar, vanilla and eggs.

3Place one vanilla wafer in each cupcake shell.

4Place about one tablespoon of batter on each wafer.

5Bake at 350° for about 20 minutes.

6Cool and remove from shells.

7Top with pie filling.

8Yields about 48 cups.
