Fruit Cocktail Cake

Ingredients

  • 2 1/2 c. sugar
  • 2 c. self-rising flour
  • pinch of soda
  • 1 (No. 303) can fruit cocktail
  • 2 large eggs
  • 1/2 c. (packed) light brown sugar
  • 1 can coconut
  • 1 c. chopped pecans
  • 1 c. evaporated milk
  • 1/2 c. margarine
  • 1 tsp. vanilla

Directions

    Sift 1 cup sugar, flour and soda into mixing bowl.

    Add fruit cocktail and juice.

    Add eggs; beat until mixed well.

    Pour into greased 15 1/2 x 10 1/2-inch pan.

    Sprinkle top with brown sugar and pecans.

    Bake in preheated 350° oven for 25 to 30 minutes. Combine remaining sugar with remaining ingredients.

    Boil for 5 minutes.

    Pour over cake as soon as cake is removed from oven.
