Fruit Custard Pie

- 2 eggs, beaten
- 1 c. sugar
- 4 Tbsp. flour
- 1 c. milk
- 1 Tbsp. melted butter
- 1 1/2 c. stewed apples or peaches
- 1/2 c. sugar or to tate
- 1/4 tsp. cinnamon
Directions

1Line 8 or 9-inch pie plate with pastry.

2Stew fruit (dried apples are best) in small amount of water.

3When tender, mash and add sugar.

4Cool.

5Pour into pastry and spread evenly.

6Make custard of eggs, beaten with sugar.

7Slowly add milk, mixing well. Add melted butter and extract.

8Pour over fruit.

9Bake in a 425° oven for 12 minutes.

10Reduce heat to 350°.

11Bake until custard is set.

12Let cool before cutting.
