- 1/4 c. butter
- 1 c. sugar
- 2 egg yolks
- 2 Tbsp. flour
- 3 Tbsp. Grape-Nuts
- 1 c. milk
- 1 lemon and rind
- 2 egg whites, stiffly beaten
Directions

1Cream butter and sugar thoroughly with electric mixer.

2Add egg yolks, flour, Grape-Nuts, milk and lemon juice and rind.

3Set aside.

4Beat egg whites until they form stiff peaks.

5Fold (beat well) egg whites into mixture.

6Pour into greased baking dish, placed in a pan of hot water.

7Bake at 375° on bottom rack for 50 to 60 minutes.

8When done, pudding will have a crust on top and jelly on bottom.

9Serve hot or cold.

10Serves 4 to 6. Serve plain or with whipped cream.
