Fruit-Glazed Chicken

- 1 pkg. cut-up chicken (about 8 pieces)
- salt and pepper
- 3 Tbsp. butter or margarine
- 1 (6 oz.) can pineapple-orange juice concentrate
- 1/3 c. dry sherry
- 1 tsp. cornstarch
- 1 Tbsp. water
- hot buttered rice
Directions

1Preheat oven to 375°.

2Sprinkle chicken pieces with salt and pepper; brush with melted butter.

3Place in a shallow baking pan. Bake for 30 minutes.

4Turn chicken.

5Combine fruit concentrate and sherry; heat to boiling.

6Pour over chicken and bake 1/2 hour longer, basting frequently.

7When chicken is tender and glazed, remove to hot serving dish.

8Blend cornstarch with cold water; stir into pan liquid.

9Cook and stir until slightly thickened.

10Spoon sauce over chicken.

11Serve with hot buttered rice.
