- 1 c. flour
- 1 Tbsp. baking powder
- 1/2 tsp. cinnamon
- 1 c. skim milk
- 1/2 c. mashed banana (1 large)
- 1/2 c. raisins or cooked apricots or prunes
- 1/4 c. vegetable oil
- 1/4 c. firmly packed brown sugar
- 1 egg white
Directions

1Heat oven to 400°.

2Line 12 muffin cups with liners, then combine oats, flour, baking powder and cinnamon.

3Add combined remaining ingredients.

4Mix until dry ingredients are just moistened.

5Fill muffin cups 3/4 full.

6Bake at 400° for 20 to 25 minutes or until golden brown.
