- 2 12 cups flour
- 1 34 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup butter, softened
- 1 cup milk
- 2 teaspoons rum
- 4 eggs
- 12 cup raisins
- 12 cup candied cherry, chopped
- 12 cup pecans, chopped
Directions

1Preheat oven to 350 degrees.

2Grease and flour a 10-inch (12-cup) bundt or tube pan.

3Remove 2 tablespoons flour and mix with fruits and nuts.

4Sieve remaining flour, sugar, baking powder and salt in large mixer bowl.

5Add butter, milk and flavoring.

6Blend on low to mix, then 2 minutes on medium speed.

7Add eggs and beat 2 minutes more.

8Stir in floured fruit and nut mixture.

9Turn batter into prepared cake pan.

10Bake for 55-60 minutes or until cake tests done.

11Cool 10 minutes in pan.

12Sprinkle with confectioners' sugar.

13For Cupcakes:.

14Prepare batter as above.

15Spoon into 24 large muffin cups, filling 3/4 full.

16Bake for 20-25 minutes.
