  • 1/4 lb. tofu, drained
  • 1 medium banana
  • 1/2 c. pineapple (fresh cut)
  • 1 medium banana, sliced
  • 1 c. papaya, cubed in 1-inch pieces
  • 1 1/2 c. pineapple, cubed in 1-inch pieces

Directions

    Combine first 3 ingredients in blender or food processor and process smooth for sauce.

    Place remaining ingredients in a bowl and toss with tofu sauce.

    Serve in sherbet or parfait cups garnished with a piece of the fruit and mint leaves.
