- 1 Tablespoon Oil
- 1/2 whole Medium Red Onion, Diced
- 2 teaspoons New Mexico Chile Powder
- 1 can Rotel Tomato & Green Chilies (10 Oz), Undrained
- 1 can Original Ranch Style Beans (15 Oz)
- 1/4 cups Water
Directions

1Heat the oil in a medium sauce pan.

2Add the onions and saute until translucent.

3Add the chile powder and saute until the onions just start to brown.

4Add the Rotel and bring just to a simmer.

5Add the beans and water then bring it back to a simmer.

6Simmer covered for 30 minutes, stirring occasionally.

7Mash the beans with a potato masher.

8Adjust the consistency as needed by cooking uncovered or adding water.

9Serve topped with a little grated cheddar or Colby-jack cheese and some sour cream (optional, but highly recommended).
