- 2 eggs
- 1 1/3 c. milk
- 2 1/2 c. self-rising flour
- 1/4 c. sugar
- vegetable oil (for frying)
- powdered sugar
Directions

1Beat eggs with milk in medium bowl.

2Stir in flour and sugar. Mix until smooth.

3Let stand for 15 minutes.

4Place about 1/2 cup of oil in a small frying pan and heat.

5Cover the bottom of a funnel with your finger, then fill with 1/2 cup of the batter. Remove finger and let batter drop into oil in a spiral pattern. Fry to a golden brown.

6Turn with slotted spoon and fry second side.

7Drain on paper towels and sprinkle with powdered sugar. Yields 8 funnel cakes.
