- 2 c. all-purpose flour
- 1 Tbsp. sugar
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2 eggs
- 1 1/2 c. milk
- vegetable oil for frying
- confectioners sugar or maple syrup
Directions

1In a deep bowl, stir together flour, sugar, baking powder and salt.

2Mix eggs and milk together and pour into dry ingredients. Stir with a whisk until batter is smooth.

3Pour shortening into a heavy skillet to the depth of 1/2 to 2 inches.

4Heat until hot, but not smoking.

5Hold a funnel with a 1/2-inch opening in your hand and keep one finger over funnel end.

6Hold funnel over hot oil; remove finger from spout.

7Using a slow, swirling motion, dribble batter into center of pan.

8Let brown on both sides. Sprinkle with powdered sugar.
