- 1/2 lb parmesan cheese (not too dry)
- 1/2 lb asiago cheese
- 2 tablespoons green onions, chopped (Or use a mild white onion and minced it)
- 2 tablespoons garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- 1 teaspoon crushed red pepper flakes (optional)
- 1 1/2 cups extra virgin olive oil
Directions

1Remove rind from cheese and cut into 1-inch chunks.

2Pulse cheese in a food processor until the size of fine pea gravel. (This was how the recipe was written. You want small pieces of cheese, like the size of Nerds candy or maybe a little bigger.).

3Place the cheese in a bowl and stir in onion and garlic.

4Add oregano by rubbing it between your fingers to release the flavor.

5Add black pepper and extra-virgin olive oil and mix well. (If using red pepper flakes, add them in this step.).

6Cover and let stand 4 hours at room temperature.

7Serve on crackers or rounds of bread.
