- 24 large shrimp
- 12 cup flour
- 14 cup olive oil
- 6 shallots (diced fine)
- 1 teaspoon garlic
- 18 cup fresh parsley, chopped
- 12 cup chicken broth
- 2 tablespoons lemon juice
- 12 cup butter, chunks
Directions

1Dust shrimp with flour.

2Heat oil over medium high heat.

3Add shrimp and saute for 2 to 3 minutes, until half done.

4Add shallots.

5Saute one more minute until the shallots are tender.

6To pan, add garlic, parsley, stock, and lemon juice.

7Cook so that flavors combine and juices reduce down.

8Slowly add butter chunks while stirring, allowing butter melt and blend the sauce.

9Serve immediately.
