  • 2 cups cooked garbanzo beans
  • 2 cups breadcrumbs, preferably whole wheat
  • 1 12 cups vegetable stock
  • 2 tablespoons vegetable oil
  • 2 medium yellow onions, chopped
  • 12 cup sesame seed meal
  • 2 tablespoons tahini sesame butter (tahini)
  • 14 teaspoon thyme
  • 14 teaspoon coriander
  • 14 teaspoon nutmeg
  • 1 bay leaf
  • 14 cup chopped fresh parsley
  • 12 teaspoon salt
  • 3 tablespoons soy sauce
  • 23 cup shredded cheese (Monterey Jack recommended)

Directions

    Preheat oven to 325F Mash garbanzo beans; set aside.

    Heat stock and add it to bread crumbs, stirring until stock is absorbed.

    In a large skillet, heat oil and saute onions until they are translucent.

    Add sesame meal and sesame butter and continue sauteing until mixture is lightly browned.

    In a mixing bowl, combine bread crumbs, saute mixture, mashed beans, thyme, coriander, nutmeg, bay leaf, parsley, salt, and soy sauce.

    Put mixture in casserole dish and bake for 20 minutes.

    Top with cheese and bake for another 10 minutes.
