Ingredients

  • 2 Tbsp. olive oil
  • 1/2 c. butter
  • 3/4 c. chopped green onion
  • 2 cloves garlic, minced
  • 1/2 lb. mushrooms, sliced
  • 1 medium zucchini, sliced
  • 2 medium carrots, julienned
  • 1 c. snow peas, sliced 1/2 diagonally
  • 1 lb. (in season) asparagus, trimmed and sliced or broccoli is nice touch
  • 1/2 c. chicken broth
  • 1 c. heavy cream
  • 2 Tbsp. minced fresh basil or 1 tsp. dried
  • 2 Tbsp. minced fresh parsley
  • 1/4 tsp. pepper
  • 1/4 tsp. salt
  • 9 oz. linguine, cooked and drained
  • 1 c. freshly grated Parmesan cheese

Directions

    In large skillet, heat oil and butter.

    Stir in vegetables and simmer until tender.

    Stir in broth, cream, basil, parsley, salt and pepper.

    Simmer for 3 to 4 minutes.

    In heated serving dish, toss linguine with vegetable mixture and Parmesan.

    Serve immediately.
