- 2 Tbsp. olive oil
- 1/2 c. butter
- 3/4 c. chopped green onion
- 2 cloves garlic, minced
- 1/2 lb. mushrooms, sliced
- 1 medium zucchini, sliced
- 2 medium carrots, julienned
- 1 c. snow peas, sliced 1/2 diagonally
- 1 lb. (in season) asparagus, trimmed and sliced or broccoli is nice touch
- 1/2 c. chicken broth
- 1 c. heavy cream
- 2 Tbsp. minced fresh basil or 1 tsp. dried
- 2 Tbsp. minced fresh parsley
- 1/4 tsp. pepper
- 1/4 tsp. salt
- 9 oz. linguine, cooked and drained
- 1 c. freshly grated Parmesan cheese
Directions

1In large skillet, heat oil and butter.

2Stir in vegetables and simmer until tender.

3Stir in broth, cream, basil, parsley, salt and pepper.

4Simmer for 3 to 4 minutes.

5In heated serving dish, toss linguine with vegetable mixture and Parmesan.

6Serve immediately.
