- 1 can stewed tomatoes or 2 or 3 fresh tomatoes
- 1 bell pepper
- 1 onion
- 1/4 c. oil
- salt to taste
Directions

1Brown rice in oil.

2Add pepper, onion, tomatoes and water. Cover and simmer about 30 minutes.

3You may wish to add a dash of Mexican seasoning.
