Ingredients

  • 1 c. rice
  • 2 c. water
  • 1 can stewed tomatoes or 2 or 3 fresh tomatoes
  • 1 bell pepper
  • 1 onion
  • 1/4 c. oil
  • salt to taste

Directions

    Brown rice in oil.

    Add pepper, onion, tomatoes and water. Cover and simmer about 30 minutes.

    You may wish to add a dash of Mexican seasoning.

    Serves 6.
