Ingredients

  • 2 c. flour
  • 1/2 tsp. baking soda
  • 3/4 tsp. baking powder
  • 1 tsp. apple pie spice
  • 1 tsp. nutmeg
  • 1/4 tsp. salt
  • 1/4 c. light brown sugar
  • 1 1/2 c. granulated sugar
  • 1/4 c. margarine
  • 1/4 c. canola cooking oil
  • 2 eggs, beaten
  • 1/2 tsp. vanilla
  • 1 c. grated zucchini
  • 1/2 c. grated carrots
  • 1 c. tomatoes, peeled, seeded and chopped

Directions

    Sift together first six ingredients. Cream together sugars, margarine and oil.

    Stir eggs and vanilla into creamed mixture. Add vegetables and dry ingredients alternately, stirring until smooth.

    Grease and flour three 8 x 4 x 2 1/2-inch loaf pans. Fill 2/3 full and bake for 1 hour or until done at 350°. Let stand 1 hour before removing from pans.

    Add 1/2 cup chopped hazelnuts to mixture, if desired.
