- 3 c. loose packed hash browns
- 1 beaten egg
- 1/4 c. finely chopped onion
- 1/4 c. grated Parmesan cheese
- 2 medium zucchini, thinly sliced (2 1/2 c.)
- 1 clove garlic, minced
- 1 Tbsp. margarine or butter
- 3 eggs, beaten
- 3/4 c. shredded Cheddar or Swiss
- 1/2 c. milk
- 2 tsp. fresh oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
Directions

1In a large mixing bowl combine 1 egg, onion and Parmesan cheese.

2Stir in potatoes.

3Transfer mixture to a 9-inch pie plate or a 10-inch quiche dish.

4Pat the mixture in the bottom and up the sides.

5Bake uncovered at 400° for 35 to 40 minutes or golden brown.

6Cool.

7Reduce oven to 350°.
