  • 3 green peppers
  • 2 Tbsp. butter
  • 1/4 c. chopped onions
  • 2 medium zucchini, diced
  • 1 medium tomato, diced
  • 1 tsp. dried thyme leaves
  • 1/4 tsp. black pepper
  • Parmesan cheese

Directions

    Cut each green pepper in half.

    Remove seeds and membranes. Heat the butter.
  3. 3
    Briefly saute onions and zucchini.
  4. 4
    Stir in tomato, thyme and black pepper.
  5. 5
    Spoon mixture into pepper halves. Place in baking dish.

    Pour 1/4 cup water into dish.

    Cover. Bake at 400° for 30 to 45 minutes until the peppers are barely tender.

    Sprinkle with Parmesan cheese.
