- 3 green peppers
- 2 Tbsp. butter
- 1/4 c. chopped onions
- 2 medium zucchini, diced
- 1 medium tomato, diced
- 1 tsp. dried thyme leaves
- 1/4 tsp. black pepper
- Parmesan cheese
Directions

1Cut each green pepper in half.

2Remove seeds and membranes. Heat the butter.

3Briefly saute onions and zucchini.

4Stir in tomato, thyme and black pepper.

5Spoon mixture into pepper halves. Place in baking dish.

6Pour 1/4 cup water into dish.

7Cover. Bake at 400° for 30 to 45 minutes until the peppers are barely tender.

8Sprinkle with Parmesan cheese.
