  • 1 tablespoon butter
  • 1 cup finely chopped onion (about 1 medium)
  • 8 garlic cloves, minced
  • 2 (15-ounce) cans white hominy, drained and rinsed
  • 1 cup fat-free, less-sodium chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

    Heat butter in a medium saucepan over medium-high heat. Add onion and garlic; saute 3 minutes or until onion is almost tender. Add hominy and remaining ingredients. Bring to a boil; cover, reduce heat, and simmer 15 minutes.
