- 34 cup cornmeal
- 1 12 cups water
- 2 cups shredded sharp cheddar cheese
- 14 cup butter or 14 cup margarine, softened
- 2 garlic cloves, crushed
- 12 teaspoon salt
- 1 cup milk
- 5 egg yolks, beaten
- 12 lb bacon, cooked and crumbled
- 4 egg whites
Directions

1Combine cornmeal and water in a large saucepan.

2Cook over medium heat until thickened; remove from heat.

3Add cheese, butter, garlic, and salt; stir until cheese melts.

4Gradually stir in milk.

5Add egg yolks, stirring well.

6Add the crumbled bacon, reserving a small amount for garnish; mix well.

7Beat egg whites until stiff but not dry.

8Gently fold the egg whites into the cornmeal mixture.

9Pour into a lightly greased 2 1/2-quart souffle dish.

10Bake at 325F for 65 minutes.

11Sprinkle reserved bacon on top and serve immediately.
