  • 1 gourmet cucumber (usually sold wrapped in plastic) - seeded but not peeled
  • 2 red bell peppers - cored and seeded
  • 4 - 5 tomatoes
  • 1 red onion
  • 2 celery stalks
  • 3 large cloves of garlic, minced
  • 2 cups tomato juice
  • 1/4 cup white wine vinegar
  • 1/4 cup good olive oil
  • juice from 1 lime
  • salt and pepper to taste
