Raisin Nut Bars

Ingredients

  • 2 1/2 c. all-purpose flour
  • 1 c. sugar
  • 1 c. margarine, softened
  • 4 eggs
  • 1 c. brown sugar, packed
  • 2 tsp. vanilla
  • 1/4 tsp. baking soda
  • 2 c. walnuts (pecans, nuts, almonds, etc.)
  • 2 c. raisins
  • 1 c. flaked coconut

Directions

    Heat oven to 350°.

    Lightly grease a 13 x 9 x 2-inch pan. Combine flour and sugar.

    Using a pastry blender or fork, cut margarine in until mixture resembles fine meal.

    Press into greased pan.

    Bake for 20 minutes or until edges are lightly browned.

    Meanwhile, combine eggs, brown sugar and vanilla; beat well. Stir in baking soda, walnuts, raisins and coconut.

    Spoon over hot crust.

    Spread to cover evenly.

    Return to oven; bake an additional 20 to 25 minutes or until top is set.

    Cool completely. Cut into bars.
