Ingredients

  • 3 cups tomato juice
  • 2 tablespoons olive oil
  • 2 tablespoons wine vinegar
  • 1 clove garlic
  • 2 medium tomatoes quartered
  • 1 small cucumber, cut in pieces
  • 1 small bell pepper, cut in pieces
  • 3 medium stalks celery, sliced
  • 1/4 medium onion, cut i pieces
  • 4 sprigs parsley
  • 2 slices of bread, torn in pieces
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 cup croutons
  • cucumber slices

Directions

    Put 1 cup of the tomato juice, olive oil, wine vinegar, and garlic in a blender. Blend till garlic is finely chopped.

    Add half of tomato, cucumber, pepper, celery, onion, parsley, bread, salt and pepper to blender.

    Blend till pureed and transfer to tureen.

    Repeat with remaining ingredients.

    Cover and chill thoroughly.

    Served with croutons and cucumber slices.
