  • 1 medium red bell pepper, roughly chopped
  • 12 medium cucumber, peeled and roughly chopped
  • 12 red onion, roughly chopped
  • 13 cup extra-virgin olive oil
  • 13 cup almonds
  • 3 tablespoons sherry wine vinegar
  • 1 medium fresh jalapeno, seeded and roughly chopped
  • 2 garlic cloves
  • salt and black pepper
  • 1 avocado, thinly sliced (optional)

    Put the tomatoes, bell pepper, cucumber, onion, olive oil, almonds, vinegar, jalapeno, and garlic in a blender; season with salt and pepper.
