- 3 fresh tomatoes
- 1 medium cucumber
- 1 bell pepper
- 1 onion
- 1 (48 oz.) can tomato juice
- 2 garlic cloves
- 2 Tbsp. olive oil
- 4 Tbsp. vinegar
- 2 slices avocado
- chopped hot pepper (optional)
Directions

1Coarsely chop tomatoes, cucumber, bell pepper and onion. Combine in a large bowl.

2In an electric blender, blend tomato juice, cloves, olive oil and vinegar.

3Add to chopped mixture. Serve with warm tortillas topped with melted cheese.
