  • 1 1/2 c. tomato juice
  • 1 clove garlic
  • 2 Tbsp. salad oil
  • 2 Tbsp. vinegar
  • 1/2 medium cucumber or zucchini, pared and cut in chunks
  • 1/2 c. onion, coarsely chopped
  • 1 lb. (6 to 7) ripe tomatoes, peeled, cored and cut into quarters
  • 1 tsp. salt
