- 3 lb. fish*
- 1 large or 2 small yellow onions, peeled
- 3 eggs
- 1/4 to 3/4 c. matzo meal
- 1 c. cold water
- 1 tsp. sugar
- salt and pepper to taste
- Fish Stock for Gefilte Fish (recipe follows)
Directions

1Put the fish and onion through a meat grinder.

2Place the mixture in a bowl.

3Add the other ingredients and mix thoroughly. Do not use all the matzo meal at once because you may not need much in order to make a firm and workable fish paste.

4Season generously with salt and pepper.

5Form into balls and cook in the fish stock.

6Let it come to a boil, then cook slowly for 1 hour with a lid on the kettle.

7Serve the fish cold in some of the broth.

8Traditionally horseradish is served on the side.
